I'm British, and grew up with a grandmother who went through war time, so bread pudding is in my veins! To be honest I have no idea what the difference between bread 'n' butter pudding and plain old bread pudding, but to me they've always equalled kind of the same thing and it's a brilliant way to use up old bread and warm the cockles on a cold night.
It's a very simple recipe and whilst it's not that attractive, it tastes great! here's how it works...

- Take your old bread, even slightly mouldy bread can still be fine.
- break up the bread into small chunks, mixing in pinches of flour, vanilla extract, sugar, mixed peel, cinnamon, nutmeg and ginger.
- Next pour over milk (soy, rice) until the whole mixture is slightly damp.
- If you're so inclined, now pour a reasonable dose of brandy over the mixture.
- Leave the mixture to soak for a few hours or over night.
- Cook on a low heat for about an hour and serve with any number of delicious toppings!
