Tofu and Spinach Pie

If someone offered me tofu and spinach pie I would roll my eyes, assuming they thought that vegans only eat tofu and spinach. ButÂ… my fridge was sad and empty the other day and the only two things I had to cook with were tofu and kale (a close relation to spinach).
